Tripas, in Mexican cuisine (known as chitterlings in English-speaking countries), are the small intestines of farm animals that have been cleaned, boiled and grilled. Tripas are used as filling for tacos, and then dressed with condiments such as cilantro, chopped onions, and chile sauce. They are also served with pico de gallo and guacamole. 

Don't they sound delish?

Over it. Do you know that the Santa Maria style b.b.q. started in my town and tri tip is the meat of choice?

I just checked out your link. I'd never heard of it before but count me.

 

Do they have their own style of BBQ sauce as well like southern bbq and carolina bbq sauces?

We don't have any pits quite like that around here.

 

I think the dry rubs and vinegar based BBQ sauces are the best, how about you?

I've had quite few like deer, rabbit, elk, ostrich, wild turkey and wild boar.

 

Is there anyone in particular that you would like to try?
