Any vegetarians here? I've decided to give up meat altogether...

I've toyed with the idea for quite a while, and have cut down on my meat consumption considerable in the past few months, especially. I just think it's healthier, and I've got a few issues I think MAY be related to eating meat, especially red meat.

 

Anyway....if there are vegetarians here, I'd love to discuss the pros and cons of it. :-))

I'll still be eating eggs, I'm sure....and once in a while, maybe some wild caught Alaskan salmon....

 

I'm going to have to study up on vegetarian nutrition. I don't want to short change myself...I know veggies of any kind, fruits, nuts and seeds, as well as whole grains should be on my list. All the stuff I like, anyway....

 

Btw yesterday, for the first time in my life, I made and ate spaghetti squash. It seems to be very versatile...I found all kinds of different recipes for it. I made it with sauteed onions, tomatoes, basil, but didn't have black olives or feta cheese. Still, it wasn't bad at all. Seems like it takes on the taste of whatever you mix it with....maybe next time, I'll try the marinara....:-)
