yesterday I made grilled swordfish...it was delicious!

1/4 cup white wine

1/4 cup of rice vinegar

lemon juice--preferred fresh lemon

1 tbsp of olive oil

then the spices--cilantro, parsley, paprika, garlic...or whatever you like

I marinated for at least an hour and grilled it for 4 min on each side.....wow.....i loved it!

ah....now this thread I will follow.

The traditional British method of BBQ is to use an open grill so that you can get good flame ups, thereby burning the outside black, while leaving the the inside raw.

Fortunately, nobody gets sick because they drink four times their own bodyweight in alcohol - killing any possible bacteria left in the raw meat.

I have embarked on the American method. I have bought a 'big green egg' - so that I can start gently cooking, smoking etc.

Swordfish sounds nice!
