Prime rib, mostly because I need the drippings to make the Yorkshire pudding and gravy.  :)

 

Yorkshire pudding is, as DD said, a roll or pastry type thing. The batter is made with flour and water and eggs and poured into a pre-heated ceramic dish containing some beef drippings. The batter puffs up high and crisp on the outside and tender on the inside-- rather like a cream puff shell. When you take it out of the oven, the top collapses (like a souffle) making a perfect pastry bowl to hold the gravy. As DD says, nom Nom NOM!!
