For some reason, I have been "off" cooking for the last month or so but I think I'm getting in the mood again. So tonight we're having a chicken and chorizo paella. I've made it before but I decided to try a new recipe from Michael Symons. Wish me luck!

The paella turned out great! It looked just like the photo except that I didn't have any butternut squash so I used some chopped sweet red peppers, frozen corn and frozen peas (mine was prettier than the photo  :) ). My husband (who hates leftovers) said that he would be happy to eat it again tomorrow.

I know there was a baking thread but can't find it .... But baked a gluten free banana and berry loaf - used mainly stevia instead of sugar - so this is healthy too ... photos aren't great but can say yum!

 

Am currently trying to make a cauliflower base pizza - so wish me luck !

I know there was a baking thread but can't find it .... But baked a gluten free banana and berry loaf - used mainly stevia instead of sugar - so this is healthy too ... photos aren't great but can say yum!

Publix... best supermarket ever! 

 

BTW I am making chili tonight. I think that I may make a food porn thread because I feel bad posting my super bad for you stuff in Leanna's healthy food thread. 

If there are any leftovers - when is the best time to stop in for a bowl  - I love chili - we should do a chili thread because everyone makes it different-

Its not necessarily about healthy meals.. its just about whats for dinner tonight. There are some really good ideas here and I gotta tell ya I cant wait to find out more about this cauliflower pizza.. post pics and recipe.

 

I am still working on pumpkin cheese cake... last night I did a test run with the filling and instead of making a cake I filled up a bunch of custard cups. Surprisingly this morning after it set,  I have a pretty good tasting cheese cake in a bowl... It could be a little sweeter, I should have used the full amount of sweetener, but was scared of making it too sweet... live and learn,,,,  

Today I went out and bought the spring form cake pan, So now I have to figure out a crust and make it for real.

Mine is really basic. Onion, garlic, beef, beans, tomato sauce, crushed tomatoes, and seasoning. We top it with cheddar and sour cream and eat with corn bread.

I try different recipes each time. We are going to have some real fall weather this weekend!! I am so happy about this!

this was actually a couple nights ago... I forgot to post it...

 

Simple baked chicken with tarragon, green beans with sliced almonds sauteed in bacon drippings... and a twice baked cheddar cheese bacon and green onion potato topped off with greek yogurt...

Sounds good -  I make mine Irish Style I use beef and hot pork sausage, celery, onions, red potatoes (instead of beans) garlic, diced tomatoes with green chilis,

some blended black, white, red and green crushed pepper, some cumin, secret chili spices, sauce and paste and of course at least 12 - 16 ounces of beer.

serve with chedder.

Haha that would be funny - I miss Shoprite - they don't have that down in SC - I went all the time in NJ.

 

NO the chili spice I use can only be found in Louisville, KY  -long story how I stumbled across it but it is soo good!!

I'll make chil soon and invite DD over so she can attest to it..

Recipe?

 

Pippa, your food looks amazing!

 

 

Banana and raspberry loaf cake

Serves: 18

Time to make: 75 (Hands-on time: 15, Cooking time: 60)

 

 

2 cups gf flour

3/4 cup sugar - I used 1/4 cup sugar and 1/2 cup stevia

1 teaspoon GFbaking powder

1 1/2 teaspoon bicarbonate soda

3 mashed ripe bananas

1/2 cup vegetable oil - or you could substitute some apple sauce

1 tablespoon skim milk - I use rice milk because I also limit dairy

2 eggs - lightly beaten

1 cup fresh or frozen berries

 

Instructions

Step 1 Preheat oven to 180ºC and line a large (25–30cm) loaf tin with baking paper. Mix baking mix, sugar, baking powder and baking soda in a large bowl.

 

Step 2 In a separate bowl, whisk bananas, oil, milk and eggs. Add to dry ingredients. Gently stir until combined. Add raspberries and mix gently.

 

Step 3 Pour mixture into the loaf tin. Bake for 1 hour, checking occasionally. The loaf is cooked when a knife or skewer inserted into the centre comes out clean.

 

Not sure I agree with the size of the tin they suggest - i just used a normal loaf tin ... Interested to see what others think ?

Still need to work on my pizza - but quite like the concept- this is what it is meant to look like !!

Put the cauli flower in a food processor and blend until fine. Cook in a microwave - covered approx 8 minutes until tender. Let cool totally then had 1/3 cup of Parmesan, 2 lightly beaten eggs and some dried oregano.

 

Spread out on lined pizza trays to abou 3 mm thick

 

Bake in a180 celcius oven for approx 15 minutes

 

The edges of the base will become golden.

 

Here is where I think I was too impatient - but from my experience take out and let it set / cool completely and then top with your preferred choice. I did a mexican beef and bean - which turned out like this .... You can see my base broke up a bit because i didn't let out cool enough

Tasted good but I don't think it was pizza .. Although I think I was impatient and didn't leave it long enough !

 

Today- found the first if the new season mangos - yum Thai salad

Today I am making stew all day for football later - my house smells like home as a child - love me some stew!!
