Leanne, your parfait looks luscious! You have encouraged me to try it. I have to find chia seeds first, though.

You can find them in your local Trader Joes's or organic section of your supermarket.  They are a great protein booster, I add them to yogurt.

Your on a roll Leanna!!! It all looks great!!

I have been so busy, and shoveling snow is just one more thing that I don't have time for....

So Last nights dinner...

Flounder stuffed with crab meat ( I make crab cakes and use half of a crab cake to stuff each flounder, twice baked potatoes ( cheddar and chives,I made 8 and froze the rest), quartered brussel sprouts(that I sauteed in garlic oil, sliced almonds, bacon crumbs, and onions)

Not much for color with this meal, but it all tasted good!!

And I dont even like brussel sprouts!! lol

Just a simple, old-fashioned meal tonight but one of my husband's favorites-- corned beef hash and eggs with a side of stewed tomatoes.(Yes, the eggs are fried because we like those better than poached. :) )

Yummy! I wish I could eat eggs. They make my mouth water whenever I see pictures of eggs, haha.

I do the same thing,,, poached is ok... but frying them is easier and just as good.

how do you make zucchini chips?? And I never figured out the kale chips either... lol

I mean, are they crunchy???

They are, but apparently, you have to make sure they are very dry before baking. Otherwise, you may end up making the dreaded soggy kale chip, lol. Mine were pretty crispy.
