Its not necessarily about healthy meals.. its just about whats for dinner tonight. There are some really good ideas here and I gotta tell ya I cant wait to find out more about this cauliflower pizza.. post pics and recipe. I am still working on pumpkin cheese cake... last night I did a test run with the filling and instead of making a cake I filled up a bunch of custard cups. Surprisingly this morning after it set, I have a pretty good tasting cheese cake in a bowl... It could be a little sweeter, I should have used the full amount of sweetener, but was scared of making it too sweet... live and learn,,,, Today I went out and bought the spring form cake pan, So now I have to figure out a crust and make it for real.

I see you are garnishing Leanna... looks tasty!!! How are you making out with the rice pastas??? I have been using them but try to only cook what I am going to eat for that meal. I find that saving leftover rice pasta sort of works if you are reheating it slowly to re-serve. The lasagna worked out really well but only if reheated in the oven, the microwave was not invented for rice pastas. I will occasionally make a cold macaroni salad but cold rice pasta salads have a 24 hour or less window of good taste and texture. Got any secrets on how you deal with rice pastas?? Humbled... that looks really good. I am going to have to make a meatloaf soon, it is good fall season food. I will do a combo of beef turkey and pork. On a less healthy note... I am now working on making a pumpkin cheesecake... My plan is to use honey and goat cheese instead of sugar and cream cheese... not sure what to do for the crust yet, but I am thinking maybe some different nuts and coconut with honey and GF oats... any ideas?? I will keep you posted

So... this was breakfast/lunch today... yellow and green squash sautee with onions and cherry tomatoes left overs, turned into an omelette with greem onions and some cottage cheese and pepper jam on the side... I was stuffed for the day after this....

I love liquid dinners... lol Went to the doctors yesterday... I am now headed for therapy for my shoulder and and have also added to my wardrobe a elbow support for my tennis elbow??? This will teach me not to go the doctors for a check up... lol -
Spaghetti squash and chicken scampi casserole... It was really good... I mixed in some mushrooms and some sun dried tomatoes into the chicken scampi and poured that over a bed of spaghetti squash and topped it off with mozzarella cheese and green onions.

Thanks,,, I don't know what you call that salad but it was really good.... I forgot to mention that the avocado mix also had pesto in it. really good!! So as per my "to late to do anything about it" prediction... I now have 1 1/2 gallons of cream of broccoli soup made.... It tasted good too!! I put cheddar cheese in mine. Next time I will look at some recipes and see what other people do. To late for lunch now, So apparently this is part of what is for dinner tonight!! lol

I cant find anything to eat... So I decided to clear out the fridge and to make soup.... The winner is.... cream of broccoli. I am using everything I have in the fridge that is appropriate. 6 cups of turkey stock (dug through both freezers for all available stock.. may add 2 cups of pork stock if needed) a roasting pan full of broccoli (everything I through into the freezer the past few months) I roast a 30lb turkey in this roaster.... lol almond milk, heavy cream, reg milk, half and half, ( that will wipe the dairy out of my fridge ) They are not all full... With all the other ingrediants, I think I am gonna end up with 1 1/2 gallons of soup!!!

I have to do a better job taking pictures.... This was my salad the other night... sliced tomato on the bottom, then sliced avocado, then a mix of avacado and greek yogurt and topped off with Tzatziki...

So this is it after the first cooking.... the top kind of heaved even more, so I let it cool a bit and covered with plastic wrap and weighed it down with the marble slab you see under it. At least it is all back in and below the edge of the dish. It looks a lot more unorganized in the pic than it does in real life.. lol.... I will add some more white sauce on top for the second cooking. I think it will be really good when I finally get it to the table, I definitely need a bigger and deeper lasagna pan. I know it cooks down but there is 3lbs of fresh cooked spinach and two 1lb bags of frozen spinach in this dish. The whole thing has got to weigh 15 lbs or more... Dinner for two!?! :huh:

I made this yesterday and put it into the fridge for today. It is a white cream sauce spinach and mushroom lasagna. I put it together with the noodles dry and I usually freeze it for a day or two, but this time I just put it into the fridge for 24 hours and the whole thing kind of heaved. Its actually growing out of the pan, lol. Lasagna is always better when it is left over so I cook it once early (currently happening) then I let cool and reheat again at dinner time. that is grated mozzarella on top!! :D

So... a week or so ago somebody was talking about pumpkin hummus. So I told them I would attempt to make it and bring in samples. Well it turned out really good, but instead of buying pumpkin puree I cooked down a 11 lb pumpkin. So I ended up with about 3 quarts of puree. Some of this I froze in 2 cup bags, but I also tried making pumpkin custard, never did it before and although I found it to sweet and spicy, everybody that tried it said it was really good. So much for my taste buds.. lol Yesterday I was working on yet another lasagna ( that I will save for another topic ) and I realized that the plantains were going ripe much quicker than normal. I decided to use them up and made Plantain Custard. Sounds odd but they get a banana like flavor as they ripen, so I figured it was worth a shot, better than just throwing them away. So below is a pic of what I ended up with, these are just out of the oven and still in the water bath. I decided last minute to add coconut flakes to the mix. This added a nice background flavor to the custard, problem was that it gave what should have been a smooth custard sort of a grainy texture. It still tasted really good, but if i did it again I would puree the hec out of the coconut or just use some coconut extract.
