  1. Really looks great Leanna! Thanksgiving in review.... This is my pumpkin pie early in the making.... It was the first real pie that I ever made, however I have made turkey pot pies using the same crust recipe. this is how it ended up... This is celery root.. I used it to make a celery root cream sauce with bacon and mushrooms that turned into a green bean casserole. Home made crispy topper for the grean bean casserole... and finally the best green bean casserole I ever tasted... I made 4 of these. The turkey going into the oven... It is a 19 pound bird. I have removed all the bones except for the wing bones, even the legs are stuffed. I tie it together and use the long scewers to help it retake its shape, I use the vegetables around it to keep the turkey from touching the sides of the roasting pan. The stuffing could have been better, but not bad for a first try. I baked a loaf of gluten free bread and used a variety of shredded vegetables and some dried cranberries and apples to make the stuffing.... below are my ingredients... In the pic above the plastic bag is my bread mix, below is the bread baked. How can something that looks so good taste just ok?? the Turkey was very good. my best one so far.... So.. Whats for dinner tonight??? Leftovers again!! I would much rather be having pippa's chilli... lol

  3. I prepped as much as I could on tuesday, and then I cooked all day wednesday & thursday morning. I will post some pics etc a little later... been really busy week here.

  5. I cant find any fresh pearl onions!!!!! gonna have to change my plan I think... I have one more try at a different market in the morning... I got celery root for a back up just incase.
  6. Hhhmmm.. Apparently we are suppose to get 6 to 10 inches of snow wednesday into thursday??? that is gonna screw up some plans. My nieces wanted to know if we would rescedule thanksgiving if the weather was bad... I told them no... I will just eat without them and freeze some leftovers for them. lol I will do my last minute shopping tomorrow morning with the other billion people shopping for thanks giving, we will be joined by those people that need to food shop like gluttons when ever snow is forcasted. Thank god I have most of what i need. I am liking these pearl onions.. lots to do with them. I still making them creamed with spinach and mushrooms for thanksgiving. I also found a recipe where they are batter dipping them and frying, looked really good. I am also going to look into pickling them.
  7. Wow... only a week and a half to go... I am going to do a vegetable quinoa stuffing with apples and and cranberries. Not sure how its gonna go stuffing a turkey with it but I think I will figure it out!! definitely mashed potatoes cranberry sauce candied carrots creamed onions with spinach broccoli or cauliflower ( maybe both? ) Green bean casserole ( but not the one everyone else does ) not sure what else.. I will figure it all out the next two days...

  9. Here is tonights dinner... Some kind of stir fry... broccoli onions, mushrooms, chicken, sundried tomatos, fresh tomatos, etc.. not sure where I am going with this but I think it is gonna need some fetta and rice???

  12. Hhhmmmmm!!!! I forgot to take a picture.. and I am not sure what to call it... but it looked really good and tasted even better... I wish I had written the recipe down.

  15. Really nice and special DD!! I cook but this year it is only going to be 4 of us so far... Thanksgiving for us is always different every year.. I call it my holiday because it is the one holiday that I do not drive and anyone that wants to come here for dinner knows that we will be here and cooking away... this will be my first gluten free thanksgiving so there will be some changes.... I kind of keep it traditional. this pic is last years 19 pound turkey ready to go into the oven, the one thing that i do that is a little different is I de-bone the turkey... just the legs and wings still have bones.. I like this because when it is time to carve, it is so simple...
  16. Todays lunch.. salad! bottom layer is sliced tomatoes, then sliced avocados, then sliced white mushrooms, next layer is a pesto avocado sauce. and topped off with Tzatziki .. ( sorry but not sure how to spell that one.. lol salt pepper and green onions...
  17. I did peppers the other day too.. some spinach and chicken and the others turkey and rice. So this is tonights desert... I started with this dough..... And rolled it out... To end up with these graham crackers.... to make a crust''... to fill with a mixture.... that cooked for 150 minutes.... And I ended up with a a goat cheese & pumpkin cheesecake with a graham cracker, almond and coconut crust... all gluten corn and soy free.... Tasty, But it took entirely too long!! :)

  19. Ok.. so in honor of Halloween I am wearing my Halloween disguise avatar... While making this change, I stumbled on the quit train meter/counter.. I thought about it and and realized that I am 1 day away from 1 year and 10 months smoke free!! Where does the time go?? Odd enough, I was not even paying attention to it anymore.. cant remember how long its been that I did not have a meter in my signature. lol... I will leave it there for a little while for the fun of it... kind of cool!! Trust me when I say... for anyone that is still struggling at all, If I can do it,... you can do it!!! It is not as hard as you think!!! You just have to stick with it no matter what!! thanks to all of you!!

  21. this was actually a couple nights ago... I forgot to post it... Simple baked chicken with tarragon, green beans with sliced almonds sauteed in bacon drippings... and a twice baked cheddar cheese bacon and green onion potato topped off with greek yogurt... tonight will be breakfast for dinner.... will post later!
  22. Holy Crap!!! That would kill me! Literally!! lol I bet it tasted really good going down though! :) to answer your question,,,, I cant remeber the last thing I had that I shouldnt have, but I am sure it included alcohol... lol Wine Time!!!!

    Pet Pics!

    This is Nucy & Ivan... (on top) Nucy, short for Nuisance is about 3 years old now, she was dropped off on our front porch when she was about 7 weeks old. (bottom of fountain) This is Ivan, he is almost 11 years old now. He was washed down to us during the flooding of hurricane ivan. this is nucy the weekend that we got her, (thats a soup bowl).... They really do love each other,, but the little one always starts up and wants to play... Poor alex... how long does she have to wear that stupid hat???
  24. It took me almost a year to lose the weight... I would lose 8 or so pounds and then nothing for 3 or so weeks?? Then all the sudden another 5 would disappear and then nothing etc. etc. I lost 55 pounds, the first 25 to 30 took me almost 8 months ( I basically gave up bread pasta potatoes and I started peddling a bike ). Then I joined a gym and started doing light weights with a personal trainer, two 30 minute sessions per week. The Weight thing was the key, I lost the next 20+ pounds in less than two months. Someone else will be able to explain it better, But working the muscles starts them burning calories and fat all day long. Its amazing because I was not even lifting alot of weight, although I did feel it. think about using some of that found money from not smoking and hiring a personal trainer for a few months.
