  2. Ok... on the recipe thread Leanna has a recipe for Sugar-Free Apple Pie Chia Seed Jam + Breakfast Parfait: I didnt want to gum up the recipe thread with chit chat so I came here to ask.... Leanna, How did it turn out?? It looks really good and it is something I can eat!!!~

  4. Lots of good direction for you on this thread... I agree with babs and humbled... You have proven that you can do it... you are just lacking a little bit in the long term follow through... So this time.. get rid of the maybe's and the I thinks... And just do it!!! I am not saying that it was a piece of cake... but I look back now and think " well that wasnt so bad " I wish I had done it sooner. But at the time.. it was one of the hardest things I ever did. Do it for you!!! Do it for those who love you!!! And Hell... do it for us because we are your biggest fans!!! You can do this... You know you can.... So do it this time!!!! We all know you can!

So I take a portabello mushroom cap and simmer in a pan with a little water and some steak sauce, I place it on a casserole upside down and fill it with some spinach that I have sauteed with chopped onions, Then I add a beef burger that I topped with a slice of swiss cheese, then a layer of sliced tomatoes, with some sauteed sliced onions and mushrooms, and finally two slices of swiss on top, all ingredients were hot going together (except tomatoes) and I put the whole tower into the oven for about 15 minutes on 250 degrees for about 10 to 15 minutes or until the cheese is really good and melted. I served it with a side of homemade mayo, home cut fresh french fries & cole slaw.(not shown) I am gluten free (no rolls in my world) so this is how I eat a burger.. the little slice of tomato on top was just to pretty it up for you guys..lol

  9. I split the thick part of the filet on the flat and basically make a sandwich with it, the tail end is thinner so I just fold it over onto itself. I lightly butter the caserole dish, then place the bottom layer of cod , then I layer the other ingredients lightly brushing some butter on the top ingredient... then I place the top layer of cod, and lightly brush with butter again... Not a lot of spices on my seafood because I try not to cover up the flavor.. but always some lemon and parsly for me. There is no sauce, just the juices that develope while baking... 350 degrees for about 35 minutes. Note: I make four of these at a time... 2 for dinner and 2 to freeze for a about 10 days. I wrap the casserole with plastic wrap and then foil. take out of freezer in the morning, cook that nigh the same as above.

  12. Being Gluten Intolerant, that looks even tastier to me than you understand Leanna.... Good good good!!!!! :) Tonights dinner as previously promised.... Salmon cakes, shrimp stuffed with crab, coleslaw and sweet potato fries,,, the pink stuff is a beet relish tarter sauce. Not shown is a tossed salad with a home made pickled yellow pepper based thousand island like dressing. . gluten, corn, & soy free... everything from scratch!... yep, I make the mayo and the ketchup too. :)

  14. OK,, I am looking into the actifryer and although I want to try one out,,, I was surprised at the price tag. So I am going to have to do a bit more investigating before making the investment. Any input on what you do or do not like about the one you are using... or any guidance at all would be appreciated. I currently have a deep fryer that I have filled with olive oil and for the most part only use for vegetables.. I make my own chips, these are some of my plantain chips that I season with salt and cummin... and these are sweet potato chips that I season with salt and nutmeg... I made 2 1-gallon bags of these chips the other day, some to sample out because people were curious about them. I finally made some horseradish hummus that turned out really good to go with them. I will have to make a batch in bulk this week now that I know it will be good. Edited to note that because I use a better grade oil in my fryer, the chips are not greasy and the salt does not stick very well so there is not much salt if you were wondering about salt content.
  15. Ok... so today I once again did machines and weights... I dont really have my self on a schedule or plan right now. I gave up on the personal trainers and am going it alone... It is OK but I feel like i need someone to tell me what to do all the time... because of my back, I always do a little of the back muscle machines ( not to heavy ) and then i alternate everyday between more back upper body, then more back and abs... then more back and legs, lower body etc...also I do 3 or 4 spin classes per week.. I just got a 9K bill for the audit that I went through last fall... I can not afford personal trainers right now.

The Chili is for dinner tonight and there is enough to share and I may freeze some too. 1 1/4 pound of ground turkey onions green and red peppers 1 Serrano pepper 1 can kidney beans 1 can black beans 2 cans diced tomatoes 1 cup ham stock 1 cup tomato juice 1/4 pound smoked turkey kielbasa (chopped fine for flavor) fresh garlic chili powder cayenne powder paprika oregano cummin tumeric salt and pepper I think that is everything.. I am going to to serve over rice with some cheddar sprinkled on top tonight. I am also going to make some plantain tortilla chips, and quacamole tomorrow or wednesday so I can make a nacho platter.....

  21. Hmmmm... I kind of got away from this tread... not for any reason it just happenend. I did a 1 hour spin class this morning. I will try to be more faithful to this thread in the future.

  24. I am not really a big fan of salmon, but I do make salmon cakes a couple times a year that are really good, I also use it to stuff mushrooms for an appetizer. I am wondering what went wrong beacon?? the recipe seems pretty straight forward why was it not so good when you made it? jmho... when using greek yogurt (especially in salads like this) the only one I will use is cabbotts plain greek yogurt. It is very tasty and has a much lower water content... not always so easy to find but if you can get it... try it. I use it as substitute for sour cream too!
  25. Haha... I tried to do a gluten free pizza crust 2 days ago, and although edible, I labeled it unsuccessful too! I have fresh garlic in all of them...except, Roasted garlic is the main ingredient in my pumpkin hummus, it is not sweet. I like spicy... What kind of spicy are we talking about that has a kick??? I am on my own here because I cant eat the store bought Hummus to sample them... I see a roasted pepper every once in a while... has anyone tried this??
