OK... so it might be a little confused, but I didnt have a good plan for dinne and needed to use some stuff up in the fridge... so this is what happened... for a side,,, Its a combination of quinoa, rice, sauteed with kale and roasted garlic... to the right is an avacado and chick pea (dip, sauce, side, ) not sure what to call it but it is sort of like a quacamole type thing and it was really good... for the main I had some fresh halibut that I sliced to have a top and bottom, in between I put spinach, mushrooms, onions and tomatos... Like I said,, sort of an odd combo, but it was really good.

Cauliflower makes a great replacement for low cal mac and cheese, I do it all the time too. Another trick is to use a rice pasta, I like the brown rice pastas because they cook and act just like the wheat pasta. But beware that rice proucts are high in sugar content so if you are watching your blood sugar pay attention. NOTE: you can also use cauliflower in place of rice.. its called cauliflower rice...( google it )... its really easy, you just process the cauliflower until its a rice size consistency. I cook it with a bit of olive oil and garlic in a saute pan, it cooks really quick. Your cauli mac & cheese looks way better than mine Leanna :) WOW! It's been Nine months since I visited this thread... :wacko:

It's all vegetables... spiralized zucchini sauteed with mushrooms and tomatoes. I sauteed it with some of the garlic pesto and sprinkled some parm cheese over the top. Really good lunch

Chicken Breast stuffed with spinach mushroom and cheese with garlic pesto brushed over the top. I am saving this one for this weekend so it is in the freezer for a couple days

I made about a gallon or so of baked beans. Its picnic time here and I cant eat any of the store brands.

Good to see you Leanna!! Not to exciting but this is a half of a spaghetti squash, it is stuffed with mushrooms zuchinni sausage, yellow bell peppers and onions seasoned with lightly with curry and topped with gluten free bread crumbs.

OK,,, back to cooking.... I ventured into the world of cooking with my new infrared gas grill. I took one of the turkey roast out of the freezer and let it thaw in the fridge for two days. I decided to cook the roast on a drip pan that I added some veggies and 1 turkey wing to so I could get some good stuff to make fresh gravy.... . then I topped it with a rack and placed the roast on top uncovered... . I roasted it uncovered at 350 degrees F. for a bout 2 hours 30 minutes . I turned out better than I expected.... I am planning to use the grill alot this summer, tonight I am going to make mac and cheese, and I am also having cod stuffed with crabmeat... the infrared grill is really working well for me.

Yep,,, this needs a pic! Lol @ Sonic as always.! Life is good!!! but since no smoking it is especially good when peddling the bike and not running out of breath after the first mile!!!

The butter ball turkeys were on sale $1.19 pound... so I got 22 pound one. But when I got to the check out there was no barcode so they just charged me $20.00. ( $0.91 per pound :D ) I de-boned the turkey again and this time I roasted the Legs and the bones with some vegetables and made a good amount of turkey stock and the next day I barbecued the legs for dinner. I cut the breast in half and filleted and pounded each one out a bit. then I layerd a (sausage rice and spinach with cranberry and pecan stuffing) on top and rolled the whole thing up into a roast and tied it up. Each is about a 6 pound roast... this is what each looked like as I was about to wrap and put into the freezer. I will pull them out to thaw and then slow cook them on the grill soon.

make a commitment to you, and your quit, and stick to it. You can do this!!! I am sorry but have not been around much lately so I don't know your past history. But I can tell you that the above post certainly sounds both sincere, and from someone that is ready to quit. there is no exact science to this... you know what you need to do and you are apparently eager to do it. So what you do now is quit again, and never take another puff, {or buy another pack in your case}. It is not the easiest thing to do by any means, but you can definitely do it! Stop analyzing everything and just go back to the basics... dont ever light up again!! Not sure why you are waiting till tomorrow... quit right now!!! know that you can do it!.. you are going to love being a non smoker. Keep Posting!!!

Easter... We spoinser the volunteer fire company annual easter flower sale every year at our store.... I wrap the northern end of out porch with tent sides to keep the flowers safe..... We get about 800 flowers delivered and this is what a portion of them look like inside the enclosure.... Ok... this has nothing to do with food... But I wanted to say Happy Easter to all of you!!! see ya next week!!!

Hey Everyone.... Got lots going on and super busy, but I wanted to put in another pic so you all know I am still breathing... lol My Nieces came for dinner Sunday night so I made a Stuffed pork loin roast... I stuffed it with prosciutto, spinach, mushrooms and Mozzarella cheese... This is is going into the oven,, I forgot to take a pic when I took it out of the oven.... I am getting better at making the knots when wrapping it up... I served it with a broccoli and rice casserole,... almond and bacon sauteed string beans,.... cranberry sauce.... and a creamy pork gravy

I am losing track, but a couple nights ago I roasted a pork loin roast stuffed with spinach and mushrooms.... I made a vegetable cream sauce and served with asparagus and twice baked potatoes

I think I have talked about it before, but I get deliveries of fresh soaked garbanzo beans... this is last weeks delivery, a little over 16 quarts ( 4 gallons or about 15 liters ) that's a lot of hummus!!! lol
