  23. Now, I'm no expert for sure but, a Good Housekeeping recipe for Cajun Rub might be a little suspect. Here are their Ingredients from Sarge's link and some errant comments from moi. 2 tablespoon(s) paprika Get that really, really good Hungarian stuff with bite. 1 tablespoon(s) coarsely ground black pepper 1 tablespoon(s) ground cumin 1 tablespoon(s) brown sugar ???? ya don't need friggin' sugar, sugar 1 tablespoon(s) salt 2 teaspoon(s) ground coriander ??? probably good but, it better be freshly ground. 1 teaspoon(s) dried thyme MORE thyme. 1 teaspoon(s) ground red pepper (cayenne) Like Sarge says, you better be talking about TABLESPOONS, please, nice hot capsicum from your garden. :) 1/2 teaspoon(s) garlic powder 1/2 teaspoon(s) ground allspice this sounds like you're making apple pie...not cajun seasoning, cher. But, maybe good, dunno.

  25. "I have not had a lot of luck with fresh fish where I am...except for a very expensive shop that makes trips to the Gulf each week...but that is for a treat" says Nancy. It's expensive here too, nice red snapper etc. and only for a treat, alas. Although sometimes lucky and catch a guy selling out of his truck to the restaurants early in the morning. Still pricey though. Thank gawd Shrimp are still fresh and reasonable. I am spoiled, for sure. Don't y'all have fresh catfish up there ? What is the country coming to fgs.
